Espumas & Foams

An Espuma or culinary foam is created by mechanically incorporating air into ingredients, converting dense sauces and liquids into light, sumptuous ‘air’. The introduction of air doubles the volume of the base and provides a very different mouthfeel and texture to the original. The Espuma or food foam created can intensify certain flavours and this technique allows Chefs to integrats new flavors into a dish without changing its physical component.
